Chicken & Walnut Kale Salad




As Veggie Girl had mentioned, she and I are on a quest toward healthier eating.  Though I don't aim to be a vegetarian, I am trying to minimize my consumption of meat and have more veggies in my diet.  Here's a quick salad dish I made up, and it's what I had for dinner tonight.

Again, this is a no measure, no pressure kind of dish for me.  The ingredients listed below are approximate measurements or what I call "guestimate."  I just threw things together and I came up with something delish.

Ingredients:

Serves 1

chopped up kale, washed and drained (about 2 handfuls)
shredded boiled chicken
2 Tbsp. olive oil
2 Tbsp. balsamic vinegar
1 tsp. honey
garlic powder (a dash or so)
1 Tbsp. chopped unseasoned walnuts

Procedure:

1.  Warm up the olive oil in a pan on low heat.
2.  Add in kale.  Drizzle with balsamic oil, add chicken, garlic powder, and water.  Toss all the ingredients in the pan.  Cover the pan and simmer for about 2-3 minutes.
3.  Transfer everything on a plate except for the leftover balsamic vinegar. With the heat still on, add the honey to the balsamic vinegar and simmer for a few seconds until honey is well incorporated.  Drizzle the balsamic dressing over veggies and you're done.  -GG-

The main ingredients:  kale, balsamic vinegar, garlic powder, honey.  

Toss all the ingredients together.  For a vegetarian version, omit the chicken.

Add honey to the leftover pan juice, and drizzle over salad.
