How I Like My Bacon (Garlic Fried Rice)

It is very rare that the hubby and I get to have breakfast together during the weekday.  But today, when I mentioned bacon, he immediately got hungry before I could even get out of bed.  Yeah, the power of bacon...LOL!
The way I like my bacon is with garlic fried rice, and fried egg on the side, and with good strong coffee, I am set for the day.

My hubby on the other hand opted for a different variation.  He chose to have his bacon with  eggs over easy, sourdough bread, and orange juice for his drink.

With butter on warm sourdough, and a choice of strawberry or grape preserve, he was set to go to work.

For today's recipe, I am giving you garlic fried rice (Sinangag in Filipino).  For a bit of trivia, sinangag and fried egg is commonly served at breakfast in the Philippines, with different choices of meat or fish to go with this combo.  Colloquially, what I am having here today is known as BacSiLog, that is short for Bacon, Sinangag and Itlog (egg)  I am happy to say that Veggie Girl likes my garlic fried rice over the restaurant version.  I hope you like it too.  -GG-

Garlic Fried Rice

Ingredients:

Serves 1

1 Cup day-old or leftover cooked rice
1 big clove of garlic or 2 small cloves (minced)
1 Tablespoon cooking oil
Salt to taste

Procedure:

1.  Heat up the oil on medium heat.  Add the garlic and cook until fragrant.  Do not allow the garlic to brown.  Garlic must still be white in color.

2.  Add the rice and stir fry quickly.  Add salt to taste.  Serve immediately.
