Yakiniku Salad with Ginger Soy Dressing


Here's a quick and easy meal that is easy to prepare.  It's for those days when you want to have some greens but you also want to balance it with a little bit of meat.


First of all, everything was store bought except for the salad dressing.  While shopping at Stater Brothers yesterday, I just happen to pass by the butcher section and the marinated top round beef in yakiniku sauce caught my eye and immediately made my mouth water.  So even if this wasn't on the list, I thought I might as well buy it.  So I bought half a pound of this mouth-watering beef, drenched in yakiniku sauce.  I then bought a bag of salad, in this case a bag of Fresh Express 50/50 Mix.  

All I did was slice the beef into strips, stir fry quickly, made some dressing and tossed it over the greens.  And that was dinner for us last night.  Yum! -GG-

Ginger Soy Dressing

Serves 2

Ingredients:

Note:  I really did not measure every ingredient, which is typical of me. So what I have here is a "guess-timate."  I just let my taste buds guide me all the time.

1/4 cup soy sauce
1/4 cup extra light olive oil
1/4 teaspoon ginger powder
1 tablespoon honey
fresh juice of 1/2 lemon (about 1 tablespoon)

Procedure:

Combine all ingredients and whisk together until thick and well incorporated.  Drizzle over greens salad.

I made it a little on the sour and soy sauce side.  It should not be too sweet.  Enjoy!!!
