Quick & Easy Nachos


Ok, I needed to make something quick for tonight's dinner, if you can call it that.  Tonight was Game 4 of the Stanley Cup Finals, L.A. Kings vs. New Jersey Devils.  The game started at 5:00 p.m. so I needed to make something easy to eat in front of the TV.  If you watched the game, then you know there will be a Game 5 on Saturday.....hmmmm....now I need to think of what to make for that game.

The Big Picture:

  • Cook up the ground beef
  • Toss with the rest of the ingredients


Ingredients:

Serves 2

1/2 lb. ground beef
2 cloves garlic, minced
salt and pepper

Toppings:
1/4 cup chopped onions
2 roma tomatoes, diced
1/2 cup grated cheese
1 jalapeno chili, diced
2 big dallops of sour cream
tortilla chips


Procedure:


1.  Saute the garlic in very little oil
2.  Add in the ground beef. Stir the ground beef continuously to prevent it from clumping together.  Cook thoroughly.  Remove the excess oil that will come out of the ground beef as it cooks.
3.  Season with salt and pepper.


Suggested serving:
Place the beef in the center of a big plate.  Top the beef with onions, tomatoes,  jalapeno, and grated cheese.  Add two big dallops of sour cream at the very top.  Arrange tortilla chips around the beef.  Enjoy! -GG-
