Broccoli in Creamy Lemon Dressing


I always thought I can only eat cooked broccoli and I was always baffled by how some people can eat it raw, until I tried Souplantation's broccoli salad.  Ever since then, I have always come back for this salad.



But why pay for buffet when all I want is this?  So here's my own version of their salad.  The difference is that Souplantaion's salad is very sweet for me, so I adjusted the sugar to my preference.  Also, feel free to substitute...Souplantation used sunflower seeds, but I used walnuts.  If you don't have cranberries, I imagine it would taste good with raisins too.  -GG-


Ingredients:
Serves 1


1 medium head of broccoli
1 tablespoon chopped red onions
1 tablespoon dried cranberries
1 tablespoon chopped walnuts
1/4 cup whipping cream
3/4 teaspoon lemon juice
about 1 teaspoon sugar or to taste
a dash or two of ground black or white pepper


Procedure:


1.  Wash the broccoli thoroughly.  Cut up into small florets.


2. Combine whipping cream, lemon juice sugar and pepper.  The whipping cream will thicken to a salad dressing consistency when the lemon juice is added.


3.  Toss the broccoli, red onions, nuts, cranberries and dressing together.  Serve immediately.  Enjoy!
