Grilled Cheese Sandwich With a Twist



Veggie Girl recently informed me of National Grilled Cheese Sandwich Day here in the US.  Although that was two weeks ago on April 12, I thought I'd post a simple grilled cheese recipe here, as it is just one of those comfort foods we can have any time of the day.



Using whatever leftover veggies I have in the fridge, I came up with something tasty.  Feel free to substitute any veggies you may prefer.


Ingredients:


Makes 2 sandwiches


4 slices of white bread
slices of sharp cheddar cheese
1 fried egg (yolk fully cooked)
spinach leaves
1 stalk green onions (cut in small rounds)
About 2 Tablespoons butter
salt and pepper to taste


Procedure:




1.  Fry up the egg ensuring that the egg yolk is fully cooked and not runny.  Season with salt and pepper and add the green onions on top.  Cut the egg in half.


2.  Slide about 1 tablespoon of  butter on a warm griddle.  Spread it around and lay the bread over the buttered griddle.  Use the rest of the butter to spread on top of the bread while the bottom side is grilling.  Flip the bread slices when the bottom side of the bread has turned golden brown.




3.  With the golden side of the bread up, top it with cheese.  You can add as much cheese as you prefer.  Add as much spinach as you prefer, and the egg.  Top it with the other slice of bread to make a sandwich.  Enjoy!  It's really good with coffee.  -GG-
