"Jazzed Up" Meatloaf to Go


When stuck with store bought food, I usually do something to it to make it look a little more creative than just having to settle for food straight from a box.  In this case I "jazz it up" to some degree just to give my senses a little bit of a "kick."



I dedicate this post to my friend in Kuala Lumpur who is celebrating a birthday today.  There really are no rules in preparing this dish.  Go with what you want and what you know, however you wanna do it --- forget the rules.  Just like the song Route 66, "travel my way, take the highway that's the best."  Or in this case, travel your way.  Take the best route.  Improvise. It's really all up to you, and that's what jazz is all about.


The Big Picture:

  • Store bought meatloaf (or click here to make your own meatloaf)
  • Canned whole kernel corn and frozen green peas
  • Mashed potatoes

Mashed Potatoes
Ingredients:


1 large russet potato
About 3 tablespoons butter
About 1/4 cup milk
Salt to taste


Procedure:


1.  Wash the potato with a vegetable brush and peel the skin.


2.  Cut up the potato into large cubes.  Place them in a pot with water just enough to submerge them.  Bring to a boil until the potatoes are tender enough for mashing.


3.  Mash it up with a potato masher or fork.  Add the butter and incorporate well with the potato.  Add milk a little at a time to desired consistency of the potato.  Add salt to taste.


4.  Serve by using an ice cream scoop.


Corn and Green Peas
Ingredients:


1 can whole kernel corn
About 1/4 cup frozen green peas
About 2-3 tablespoons butter
Salt to taste


Procedure:


1.  Drain the corn through a strainer.  Place the drained corn and frozen peas in a saucepan on low heat, stirring occasionally.  


2.  Add the butter and incorporate it well until melted.  Add salt to taste.


Remember, there are no rules.  Follow your taste buds and get a kick out of it.  Enjoy!  -GG-
