Stir Fry Veggies

For all you veggie lovers out there, here's something quick and easy for you.  And if you're a lazy cook as well, this one's for you.  I had a Veggie craving the other day while I was at the supermarket.  I wasn't shopping for veggies that day, but when I passed the produce isle, I immediately had a craving for some veggies. -GG-

Ingredients:

Serves 2

1/2 bag of Green Giant Vegetable Medley
1 clove garlic
a few slivers of onion
1 tablespoon oyster sauce
2 tablespoons soy sauce
1/4 cup water
3 tablespoons cooking oil

Optional:  fried tofu

Procedure:

1.  Heat up the oil in a skillet or wok on medium heat.  Add garlic and saute for about 30 seconds.  Add the onions, and the vegetable medley.  Carefully add the water and cover the pan immediately.

2.  Let the veggies simmer until desired tenderness.  If you want tender carrots like I do, cook the carrots first and cover the pan until it is half the tenderness you like, then add the rest of the vegetable medley.

3.  Add the oyster sauce and soy sauce and give it a quick stir fry, until it is well blended with the rest of the veggies.  That's it, you're done.  Serve with rice or just by itself.  Delicious!

Option:
You can add fried tofu to this dish, using half a pack of tofu.  Cut up the tofu in cubes and pat dry with a paper towel.  Heat up enough oil to submerge the tofu halfway.  Carefully lower the tofu pieces into the pan, and fry on both sides until golden brown.  Add the tofu to the veggies as a topping.

You can buy from a bag or cut up your own.

The tofu getting browned.

Give everything a quick stir-fry.
