It's September and it's the beginning of the "-ber" months. We have holidays and celebrations to look forward to in the remainder of the year. To some people, the "-ber" months are the exciting part of the year, while for some it could mean a lot of running around as we prepare for Holloween, Thanksgiving, Christmas and New Year, on top of the already busy schedule we have at home, with the kids (for some), and of course work, for most of us.
I hope this simple recipe helps anytime you have to run around for the extra errands that lie ahead. It's good in kids lunchboxes, and also when you have to brown bag to work. -GG-
Ingredients:
1/2 boneless chicken breast
1/8 cup chopped onions
1/3 cup mayonnaise**
salt and pepper to taste
Procedure:
1. Boil the chicken breast until cooked. Let cool.
2. Cut up the chicken and chop in a food processor.
3. In a large bowl, combine all the ingredients until well blended.
**please note that the mayonnaise is an estimate. Start with little and then work your way up to your desired consistency.
