Swedish Breakfast

I woke up to the sound of water dripping outside. As forecasted, we will be experiencing rainy weather this week. It's April showers I guess. With this gloomy cold weather, how can I wake up to an exciting breakfast? But first, what do I already have in the fridge? Ah-ha! Ikea pancakes!...and coffee!...I'm up!!!



Ikea sells good food from their freezer section. Pannkakor is their crepe like frozen pancake. Just microwave it and you're done. I also love their Lingonberry preserve. Both are pictured here:




I added a little bit of veggies to this breakfast just to "kick it up a notch." I heated up about a teaspoon of light olive oil in a pan. Toss some fresh asparagus spears into it, season with some salt and pepper and voila! I like my asparagus to be crisp so don't overcook it, otherwise the vegetable gets stringy and soggy. Finish it off with a dusting of powdered sugar, buttered toast and freshly brewed coffee. This is so quick, so easy and perfect when you have guests over. -GG-
