Sauteed Bitter Melon

Is it deliciously bitter or bitterly delicious? How can a bitter vegetable be so delicious? Bitter melon is a gourd commonly grown in Asia. You can easily find these in any Asian market. Believed to be high in iron and as an aid to control diabetes, this vegetable is highly nutritious as well.

I have a very simple saute recipe for this wonderful tasting vegetable.

Ingredients:

2 pcs. Bitter Melon
3 cloves garlic
2 Tbsp. onion
2 Roma tomatoes
1 Egg (beaten)
Salt to taste


The main ingredients.


Procedure:


1. Cut up the bitter melon lengthwise.




2. Using a spoon, scrape off the seeds.




3. Cut up the bitter melon in 1/2 inch strips crosswise.





4. On medium heat, saute the garlic until just starting to get brown.


5. Add the onions and saute for about half minute.


6. Add the bitter melon.


7. Add about 1/8 cup of water and cover the pan. The water will add steam to the veggies and help cook the bitter melon faster. Simmer for about 10 minutes, or until the bitter melon is "al dente." Season with salt to taste.


8. Add the tomatoes and simmer for about 1 minute. I don't like my tomatoes soggy, that's why I do this quickly.


9. Lastly add the beaten egg and keep stirring well until egg is well incorporated and cooked.
